I had a couple of requests for the recipe for the muffins I posted a while back. Here it is...
Cranberry Oat Muffins
Cranberry Oat Muffins
Makes 12
3/4 cup rolled oats
1-1/2 cups all purpose flour, divided
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup butter or margarine
1-1/2 cups fresh or frozen cranberries
2 tsp grated lemon zest
2/3 cup milk
1 egg, beaten
Topping:
2 tsp ground cinnamon
2 tsp granulated sugar
Preheat oven to 400F.
In food processor, process oats until very fine. Combine oats, flour (except 2 tbsp), sugar, baking powder & salt. Cut in butter until mixture resembles coarse crumbs.
Toss cranberries with reserved flour; stir in flour mixture.
Combine lemon zest, milk & egg; mix thoroughly. Add to dry ingredients, stirring until just slightly moistened; do not over mix. Spoon into lightly grease muffin cups.
Topping: Combine cinnamon & sugar; sprinkle over muffins.
Bake in preheated oven 20 to 24 minutes.

Mmmm... cranberries. Buddy Budderson loves fall and cranberries. I think I'll have at these this week!
